Chuy’s plans to open on Michigan Road in Carmel next year

Chuy’s plans to bring its made-from-scratch, Big as Yo’ Face Burritos, small-batch salsas and fresh-squeezed margaritas to Carmel in the spring of 2019.

The new restaurant, in the former Applebee’s building at 10325 N. Michigan Rd., will be the second Chuy’s in the Indianapolis market. The company began branching out beyond Texas in the late 2000s.

Chuy’s Field Marketing Manager Courtney Jade Pelly said the company selected Carmel because of the success of the Noblesville Chuy’s restaurant. Pelly said the second generation restaurant space gives Chuy’s the opportunity to create a unique interior design.

The Carmel location will be smaller than many of its locations at less than 5,500 square feet, which is reminiscent of the original Chuy’s on Barton Springs Road in Austin, Texas.

Small freezers in the restaurants only hold ice cream and french fries. The rest is fresh, including hand-rolled tortillas that are made in an authentic comal, green chile peppers harvested from Hatch Valley, N.M., fresh roasted chicken and 10 small batch homemade sauces.

Tex-Mex menu items include their famous “Big As Yo’ Face” burritos, tacos al carbon, chuychanga, chile rellenos, Chicka-Chicka Boom Boom enchiladas, steak fajitas and Elvis green chile fried chicken, as well as fun combos like the Elvis Presley Memorial Combo, which includes a beef enchilada, cheese ranchero enchilada, chicken tomatillo enchilada, ground sirloin crispy taco and tostada chips with chile con queso.

“It’s a great experience and something you can feel good about eating. We aren’t just about the fresh food — we are about creating a great experience and sharing our culture with our customers,” Pelly said.

Construction is set to begin by the end of this year. The building will be decked out in original Chuy’s eclectic decor including a handmade wooden fish that leads to the La Chihuahua bar.
