A new Indian restaurant has opened on Main Street in Carmel offering fresh, all-natural and classic Indian fare.

Jason Singh, owner of Fresh Indian Grill, has been in the restaurant business since 1992 and attended culinary school in India.

According to Singh, all the recipes he serves are 100-percent traditional Indian recipes. The menu features an array of chicken, lamb, goat and vegetarian items.

Singh said Fresh India Grill does not use any food coloring or preservatives and only uses all-natural ingredients.

The menu features 10 side items including samosa (a crispy flour shell stuffed with potato) green peas and spices, paneer pakor, a type of veggie fritter and punjabi kulcha (a buttery bread stuffed with a mixture of boiled potato, chickpea, onion, green chilies, lemon and spices). Fresh Indian Grill also serves wraps, salads, custom naan, breads and basmati rice.

“It’s all natural, freshly-cooked and a healthy choice,” Singh said.

Singh recommends favorites such as the chicken tikka masala, chicken kabab or chatpata chana. Entrees can be topped with a variety of fresh condiments and sauces including onion chutney, mint chutney and plain dahl. Dessert items include falooda (a cold drink mixture with rose syrup), tapioca pearls and ice cream and rasmalai (a crust-less cheesecake with milk, saffron and pistachios).

All menu items are customizable and can be ordered to the desired level of spiciness.

Customers can also enjoy freshly-made drinks including several types of lassi, juices and chai tea. Lassi flavors include mango, sweet and jeera.

The restaurant emphasizes their fast, flavorful, fresh and friendly environment.
