
If you have the opportunity to visit Lima, Peru, a must stop is Cafe San Antonio. It’s not only the best bakery in town but is a favorite for locals (you will see the occasional tourist). The menu offers a variety of amazing savory and sweet dishes at a reasonable price. I’ve often been asked what can I recommend from their menu – the answer is that’s always a big dilemma because everything at this cafe, is delicioso!! Here, I try to recreate this yummy sandwich from our visit. This dish is great for lazy weekends or school lunch, because it can be ready in a flash; the secret … it is semi-homemade! It is a flexible recipe, you can adjust the quantities to your taste.

Ingredients:
1 cup Rotisserie chicken, shredded
1 stalk celery, thinly sliced
Handful cup pecans, roasted, chopped
2 tablespoons mayonnaise
1/2 cup jar peach, drained, thinly sliced (Trader Joe’s has a great canned peach)
2 croissants or white bread
Directions:
Mix together the chicken, celery, pecans and mayo in a medium bowl. Spoon mixture onto bread and top chicken with sliced peaches. You can accompany this with kale chips.
