Playoff Season Open House

As I said last week, I’ll be highlighting all the favorite foods for a Super Bowl open house.  Then I’ll feature a recipe each week leading to the Super bowl.  As I stated earlier, the favorite foods for a Game Day open house are:

  1. Buffalo wings
  2. Specialty Dips – for veggies and crackers
  3. Meat Balls – for subs and general munching
  4. Bread bowls filled with cheese or spinach dip

This Chile con Queso (Spanish for “chile with cheese”), dip is a winner.  It’s usually known simply as Queso, an appetizer or side dish of melted cheese and chile pepper typically served in Tex-Mex restaurants. We developed it over the years and everyone gorges themselves on its cheesy, spicy taste.

Ingredients:

2 lb. box of Velveeta

One can diced tomatoes

One small can green chilies, chopped

One pound pkg. Johnsonville Hot Italian Sausage

Preparation:

Use ground Johnsonville sausage or cut off the casings of sausages. Brown sausage well in a frying pan. When it’s finished cooking (approx. 20 min. on medium), drain it onto paper towels and hold it aside.

Cube the Velveeta and cook it slowly in the microwave (in a large microwavable container) a minute at a time until it is just melted into a very thick liquid. Add in all the other ingredients and stir. Re heat and enjoy on corn chips or even rolls.
