Recommended: Alma Rosa 2007 La Encantada Vineyard Pinot Noir ($32)
A good baked ziti dish hits a lot of flavor notes, and pinot noir has an answer for all. Its red fruits – berry, cherry, pomegranate and rhubarb – offer acidity to handle the tomatoes. Medium-bodied, silky pinots also have spice, herbs, loam and leather. Available from specialty wine shops and online.
