Lou Malnati’s Chicago-style pizza coming to Carmel

A Chicago staple for almost 50 years, Lou Malnati’s Pizzeria is a family owned business renowned for deep dish pizza with made-from-scratch crust and fresh ingredients.

Soon, local residents can get a regular taste of Lou Malnati’s famous offerings when it opens a new restaurant at 11435 Spring Mill Rd. in Carmel. The site, adjacent to a Starbucks, is part of The Bridges, a 65-acre mixed-use development.

Lou Malnati’s will occupy a 1,549-square foot site in The Bridges, which has 250,000 square feet of retail space. The restaurant will offer carryout and delivery service only.

Because of the COVID-19 pandemic, the opening date for Lou Malnati’s is unknown. The Northwood, Ill.-based company chose Carmel for a new location for a host of reasons.

“Carmel is a thriving and dynamic community, which we are excited to join,” said Meggie Lindberg, brand manager for Lou Malnati’s Pizzaria. “As a family oriented community, we feel it is a natural fit for us.”

Founded in Lincolnwood, Ill., in 1971 by Lou Malnati, the restaurant specializes in Chicago-style pizza with buttery crust made from scratch, along with fresh ingredients including California vine-ripened tomatoes, fresh mozzarella cheese and an exclusive blend of seasoned sausage. Other menu items include pasta, salads, sandwiches, thin crust pizza and desserts.

Lou Malnati’s has continued to be a family owned operation since the founder’s death in 1978.

“It will be owned and operated by Lou Malnati’s ownership group, which is majority-owned by the Malnati family,” Lindberg said.
